Quinoa with smokey chicken and veg 

This recipe is a perfect 20 min lunch/tea. Full of flavour, healthy vegetables and plenty of protein, this dish ticks all the boxes. A great way to make this even easier is to use frozen vegetable mixes, rather than having to prepare fresh. As this veg is quickly frozen at its prime, you won't miss out on any of the key nutrients they provide. This dish is also a great way to use up any leftover meat from other meals in the week (such as your roast).

 

Makes 1 serving

 

Ingredients

  • 60g of quinoa

  • 80g fresh/frozen veg

  • 75g cooked chicken

  • 2 tsp Bath Harvest Oak Smoked Chipotle Infused Oil

  • 1 tsp smoked paprika

  • 1 tsp mild chili powder

 

Method

  • Place the quinoa and 100g of boiling water in a saucepan on a medium heat for 20 minutes

  • Heat a frying pan with the chipotle oil

  • Place the fresh/frozen veg in the pan and fry (frozen will need approximately 15mins where as fresh will need 10)

  • When the quinoa has 5 mins remaining, add the precooked chicken, smoked paprika and chili powder to the frying pan

  • Once the quinoa is cooked, fluff with a fork and season with salt and pepper

  • Serve the veg and chicken mix on top of the quinoa
